Evento será um momento de imersão na história e na cultura gastronômica pernambucana
As relações afetivas, culturais, gastronômicas e econômicas nos queijos pernambucanos serão tema de discussão no seminário “A Arte do Queijo de Coalho”. O evento, realizado pelo projeto Queijo Pernambucano, com incentivo do Funcultura e apoio da Faculdade Senac Pernambuco (FacSenacPE), acontece na próxima terça-feira (17), no formato de live. A transmissão acontece a partir das 10h, pelo site do projeto, no endereço https://www.
Na programação, estarão duas palestras, sobre os queijos artesanais na cultura e na gastronomia pernambucana. Após os dois momentos de apresentação, será realizado um debate. Entre os temas de discussão, estão a história dos queijos em Pernambuco, as diferentes técnicas de preparação do queijo de coalho pernambucano e o reconhecimento dele como patrimônio cultural pernambucano. Pelo lado gastronômico, as possibilidades de preparações e a criatividade em torno do ingrediente serão o mote.
O evento é organizado por Benoit Paquereau, produtor cultural e fabricante de queijos artesanais francês radicado no Brasil há 23 anos. Durante as atividades, ele estará acompanhado da chef Luciana Sultanum, coordenadora do curso de Gastronomia da Faculdade Senac no Recife, e do chef Robson Lustosa, pesquisador na área de Gastronomia e professor da Faculdade Senac.
